Eggplant salad with tomato

Aubergine salade met tomaat

This salad is packed with vitamins and I think is one of our favorites. This is a salad that fits perfectly into your meal prep schedule. Of course, you can add ingredients to make the salad a little more filling. Below is the basic recipe. Enjoy!

Ingredients

  • 100 grams of mixed lettuce
  • Red onion
  • 100 grams eggplant
  • Cherry tomatoes
  • Olive oil
  • 1 tsp Italian herb mix
  • Pinch of salt and pepper and garlic powder
  • Feta
  • Optional: chicken breast instead of feta cheese

How to make it.

- Slice the eggplant and spread it with olive oil.

- Then spread some Italian herbs, salt, pepper and garlic powder on this.

- Grill the eggplant and possibly the chicken breast in the grill pan.

- Divide the lettuce and red onion into a bowl.

- Cut the cherry tomatoes and Feta into pieces and place on top of the lettuce. T

- Finally, add the eggplant and chicken breast and your salad is ready. On the day itself, you can add dressing if you wish.
